Chickpea burger patties with yogurt sauce and cucumber salad sided with my homemade Iced Tea.
chickpea burger Ingredients: Chickpea, Roasted red pepper, red onion, garlic, cumin, pepper.
Yogurt Sauce: Natural Greek Yogurt, lemon juice, scallions, salt and pepper.
Salad: Peeled cucumber, lemon juice, salt and pepper.
Iced Tea: Tea, fresh lemon/juice, mint, cinnamon, sweetener.
Egg Salad lettuce wraps!
I have not had egg salad in a long time!
I used 2 hard boiled eggs, cucumber, romaine lettuce, a tsp of light mayo, 1/2 tsp of grainy mustard and pepper.
I would have added scallions but I ran out last night :(
Low Carb Individual Pizza!
CRUST
- 1 large egg
- 1 tablespoon almond flour
- 1 tablespoon Parmesan cheese
- 1 teaspoon oil, about (I used Pam spray)
Toppings
- Lean Turkey Hot Italian Sausage
- Green Pepper
- Mushroom
- Mozzarella
- Tbsp of Tomato sauce
Crust Per Serving: 175 Calories; 15g Fat; 10g Protein; 2g Carbohydrate; 1g Dietary Fiber; 1g Net Carb

I decided to take a break from eggs today. This breakfast was AMAZING. :)
Fresh goat cheese, fresh blackberries and drizzled honey on 45 calorie 7 grain toast. After the pic I lightly mashed the berries with a fork and enjoyed it with a homemade cappuccino.
205 cal not including the cappuccino.
Last night I made a huge Baked eggplant parm. Sooo good. I now have a ton of leftovers to last me this week since I’m saving money for my trip. :)
